Ingredients:

  • 1 large sweet potato, peeled and diced into 1-inch cubes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 can (13.5 oz) coconut milk (full-fat or lite)
  • 2 cups vegetable broth
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1/2 tsp salt, or to taste

Instructions:

  1. In a large pot or deep skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook for 4-5 minutes, or until softened and translucent.
